Savory Apple Crisp
6-8 medium apples, peeled, cored and chopped into ½ inch cubes
2 medium onions, sliced thinly
Bunch of fresh or dried rosemary and sage, to taste
1½C shredded cheese, smoked cheddar and/or gouda
¾C all-purpose flour
½C packed brown sugar
¼tsp grated or ground nutmeg
1 stick cold unsalted butter, cut into small pieces
-Preheat oven to 350 degrees Farenheit.
-In a cast-iron pan over low heat, carmelize the onions until brown and soft.
-”Using a pastry blender or 2 knives, cut the butter into the dry ingredients until the mixture resembles coarse bread crumbs (this may also be done with a mixer or in a food processor, taking care not to blend the butter too thoroughly).” (Joy of Cooking, 75th Ann. Ed.)
-Combine chopped apples, onions, and herbs in a large casserole dish.
-Scatter shredded cheese mixture over apple and onion mixture.
-Scatter topping over the layer of cheese.
-Bake until fragrant, bubbling, and browned.
